Before the first Tortilla is in the pan, Pablo gets behind the wheel, visiting our partners' farms. It's a routine of selection and connection, ensuring that every egg and potato that enters our kitchen is fresh and carries the story of its origin into your Tapas.

Smeaton Egg Farm 🍳
The delicious free-range eggs in our dishes come straight from Robin at Smeaton farm (Midlothian). His hardworking care means his chickens enjoy spacious pastures and fresh Scottish air.
The result is the incredibly rich, orange yolks that make our Spanish tortillas taste so good.
Pablo can actually predict the day's tortilla quality just by scrambling the eggs!
Denholm Potato Farm 🥔
Our Spanish tortillas, chips and hand-cut crisps start with George, Damian and the team at Denholm Potato Farm in Pencaitland, East Lothian.
They are not just potato experts, they are our flavour consultants! In fact, they often help us choose the perfect variety for every new dish.


Mossgiel Organic Farm 🥛
Mossgiel farm needs no presentation!
Farmer Bryce and his family are doing an amazing job in the milk industry.
Our croquettes, Leche Frita and more get their dreamy creaminess from the champion cows at Mossgiel Organic farm in East Ayrshire.
They produce incredible non-homogenised milk that is so unprocessed you get to experience the cream at the top of every bottle!
Elphistone Garlic Farm 🧄
Last but certainly not least, meet Alex, a Scottish young farmer growing Spanish Morado garlic right here in East Lothian!
When we heard about his passionate project, we had to get involved. Now, his incredible bulbs are the star of our popular garlicky sauce - and we've been with him every step of the way.
